Chicken Soup with Homemade Noodles

I never measure (except flour), but here is the rough recipe for our family chicken soup. You will need:

For soup

  • 4 large carrots, peeled
  • 3 stalks celery, trimmed
  • 2 cooked chicken breasts
  • big box of chicken broth
  • a few cups of water
  • about 1/2 tsp each thyme and sage
  • a couple dashes of kosher salt. Kosher salt is better in everything.

For noodles

  • 1 1/2 cups flour, plus more to roll out on
  • 1 egg
  • a pinch or two of kosher salt
  • cold water as needed

Directions

  1. Chop carrots, celery, and chicken breasts. Bring to boil in broth, water, thyme, sage, and salt.
  2. Put flour in large mixing bowl. Add egg and salt, work together. Add cold water as necessary.
  3. Roll out noodle dough on floured surface. Cut into bite sized strips and drop in boiling broth. Let the kids help. Have tons of fun.
  4. Soup is done when veggies are tender. Don't drool in the pot.

This sounds tasty! It's a little too warm for soup here right now, but I'll be making it as soon as it gets cooler!
